The end of the fallow deer season finds us on the border of North and Republic of Ireland. Early mornings and wet hunts through the woods are what greet the stalkers keeping the numbers of resident deer down. It was a true holistic pleasure to see the kitchens in the local lodge serving the meat straight to the public – not even 1 food mile travelled and as fresh as is humanly possible. Even though all these skills are ones that our hosts have practised since their first sporting encounter, it is still enjoyable to see them being used in their perfect environment.
